I have been craving a good carrot cake for a long time. Believe me, it not an easy thing to make or find.<br />
Today I would like to share with you one of my favourite: carrot cake with millet cream.<br />

1/2 cup of brown sugar <br />
1/2 cup of honey<br />
3/2 cup melted coconut oil<br />
1/2 cup regular yogurt<br />
2 teaspoons vanilla extract<br />
2 cups whole-wheat flour<br />
1 tsp baking soda<br />
2 tsp ground cinnamon<br />
1/2 tsp ground nutmeg<br />
1/2 tsp salt<br />
2 cups grated carrots<br />
<br />
<b>For garnish:</b><br />
1/2 cup pistachios<br />
<br />
<b>Frosting: </b><br />
cooked in milk millet<br />
1/2 cup of honey<br />
1/2 tsp vanilla bean<br />
<br />
<b>Directions:</b><br />
First, combine the dry ingredients and the wet ingredients separately. Mix both until combined.<br />
put the mixture in a round cake tin - around 23cm. Bake for 60 minutes in 180°C.<br />

Cook the millet in milk. When the milk has completely soaked in, leave the millet for 15 minutes to cool. Blend the millet add honey and vanilla. Mix together until combined. Pour the mixture over the cake and decorate with chopped pistachios.<br />

2 pods of vanilla bean<br />

<b>Directions </b><br />

Crumble the yeasts and add 1/2 cup of lukewarm milk.<br />
1 cup of flour mix with 1 cup of boiled milk and mix with a wooden spoon so as to get rid of the clumps and leave to cool. To the cooled milk and flour mixture add the prepared yeasts and the remaining flour. Mix everything, cover with a cloth and leave in a warm place for about an hour so that the dough to rises and doubles in size .Beat the egg yolks with the sugar and vanilla beans and add to the dough. Add the alcohol and knead the dough until combined. Next add the melted butter and knead well, cover the ready dough with a cloth and leave in a warm place to rise.<br />

First, remove the excess of water from the grated zucchini with a paper towel. Mix all of the ingredients and heat the oil on a pan. When ready, form small cakes out of the mixture and fry on the pan on both sides until golden. The ready fritters should be served warm with yoghurt and sprouts, enjoy.<br />

Put the asparagus on a baking tray and drizzle them with lemon juice and oil. Bake them for about 20 minutes.<br />

On a plate spread 10 ladyfingers and pour 2 tsp of Amaretto over 5 cookies and 2 tsp of brewed coffee over the other 5 cookies.<br />

First, we boil potatoes and mash them when they are ready. We mix the flour, egg and the mashed potatoes - kneading the dough until a non-sticky mass is obtained. Next, we carve the plums and spread sugar and cinnamon over them, we can also add few drops of lemon. From the prepared dough we form small balls (about 6cm wide) and put the prepared plums inside - making sure to seal them properly. Finally, we boil the water and add a pinch of salt. The prepared "knedle" should be gently put into the boiling water and cooked for about 3-4 minutes - until they start to "pop out" of the water. We then prepare the topping by melting the butter and mixing it with honey and cinnamon. "Knedle" are served warm with the cinnamon-honey topping. As always, enjoy!:D</div>

start by mixing the powder sugar with ground almonds. Next, <span style="mso-spacerun: yes;"> </span>proceed to whip the egg whites- when the foam
begins to form add 1Tbsp of sugar and whip the whites stiff . Slowly add the
egg white foam to the almond <span style="mso-spacerun: yes;"> </span>mixture and
mix delicately until incorporated. This step is known as macaronage and it
requires a lot of attention. To check if the mixture is ready spoon a bit on a
plate or a parchment. If you notice after dropping the formed peak incorporates
within minutes, it means that your mixture is done. Otherwise you need to proceed
with mixing further, but remember not to overmix it as the mixture cannot be
too watery. <span style="mso-spacerun: yes;"> </span>The ready macaronage pipe on
a baking sheet (should be in the shape of coins) and leave it for 2 hours. When
the tops of macaroons are dry (check it by touching the macroons with your
finger – there cannot be any batter left on your finger). When the macaroons
are ready put them into a preheated oven at 180°C for about 15 minutes. The
perfect macaroons should develop a “foot” – see the picture. After the 15
minutes take out the baking sheet <span style="mso-spacerun: yes;"> </span>and
let them dry.<o:p></o:p></span><br />

with the ½ cup of milk, add egg yolks and mix well. When milk starts to boil,

begins to thicken and cook for 1 minute. Remove from the heat and add vanilla

egg whites until stiff, add sugar (one spoon at a time) and mix further until
combined. Spoon the mixture on a baking sheet and put in the oven for about 15
minutes at 220°C. When the peaks are lightly brown, turn down the oven to 100°
and bake for an hour. In the meantime, mix all the ingredients for the topping.
When<span style="mso-spacerun: yes;"> </span>pavlova is ready, let the meringue cool
in the oven for 1.5 hour and decorate it with the topping and oranges or other

Make round cookies on a peace of parchment paper, gently fold in the blueberries into the cookies and sprinkle with brown sugar. Bake in 180°C for about 8 minutes or until golden, enjoy - as always;)<br />

First, prepare the crepe mixture by mixing all the ingredients together. Put the mixture in a refrigerator for at least 30 minutes. Prepare the crepes - pan-fry in canola oil until golden. Meanwhile, make the sauce. Saute the chanterelle in oil with the chopped onion for about 8 minutes or until brown.</div>

<b><span style="font-size: x-large;">Directions</span></b><br />
<br />
First, beat the egg yolks with 25g sugar. Add mascarpone, 1tbs vanilla extract, the seeds from 1 vanilla pod and mix everything.<br />
In a separate bowl beat the egg whites with 25g of sugar. In the third bowl whip the creama and then add it to the mascarpone mixture along with the egg whites. Mix everything with a spoon until combined. <br />
The prepared mixture put in a fridge for at least 3 hours.<br />
Next, soak few sponge fingers in the dissolved espresso and others in Baileys. The amount of the soaked sponge fingers depends on how many layers of tiramisu you want to have. I used 6 sponge fingers for two layers per portion.<br />
Pour the raspberry sauce evenly to the 4 bowls, add the first layer of the ladyfingers, cover with a bit of the Mascarpone mixture, add another layer of To the prepared bowls and pour the remaining mascarpone mixture. decorate the bowls with cocao powder and raspberries and put it in a refrigerator for at least 3 hours before serving (the best option is to leave it in a refridgerator overnight). Place all the ingredients for the crust together and knead until fully incorporated. Form a ball, wrap it up in foil and put in a refrigerator for at least two hours. In the meantime, using a mixer, combine all the ingredients for the filling and place the mixture in the refrigerator. <br />
<br />
Preheat the oven to 180°C. Take out the dough ball and spread it evenly on a 30 cm round baking tin (greased with butter). Prickle the centre of the pastry with a fork and bake for about 25-30 minutes. When the pastry shell is ready, you can spread the melted chocolate and set aside to cool. When the crust and chocolate have cooled, put the pastry shell for at least an hour in a refrigerator to chill. Finally, spread the previously prepared cream and decorate it with seasonal fruit of your choice (I used grapes and a kiwi).</div>
